Recipe Crunchy rice cups with spicy Viking chicken and sriracha mayonnaise

Ingredients:
For the Sriracha Mayo:
- 1 cup mayonnaise
- 3 tablespoons Sriracha chilli sauce
- Juice of ½ lemon (about 2 tablespoons)
- 1 clove of garlic, finely chopped
- Salt to taste
For the rice cups and chicken:
- 2 cups cooked rice, completely cooled (preferably a sticky rice variety)
- 4 chicken thighs, marinated with VH.RUB2
- Muffin pan, greased
For garnish:
- Spring onion, in thin rings
- Cucumber, thinly sliced (julienne)
Preparation:
Sriracha Mayo Making:
- Mix the ingredients: Add the mayonnaise, chopped garlic and a pinch of salt to a small bowl.
- Add lemon juice: Squeeze in the lemon juice. Fresh lemon juice is ideal, but you can also use bottled lemon juice.
- Stir well: Whisk everything together until well blended. The mixture should become creamy and light pink in colour.
Rice cups Prepare:
- Preheat the oven and prepare the baking tin: Preheat the grill to 200˚C indirectly and grease the muffin pan.
- Form the rice cups: Add 20-30 grams of cooled rice to each cup of the prepared muffin pan. Use your fingers to press the rice around the sides of the cups and make a cavity in the centre. Make sure the sides and bottom are even and not too thick.
- Tip: Wet your fingers a little if the rice sticks to your fingers.
- Bake the rice cups: Bake the rice cups for 20 minutes, until the edges are golden brown and the cups start to loosen from the baking tin.
