Spicy hoisin chicken thighs

- 500gr chicken thighs
- 200gr smoked bacon in slices
- Chicken rub
- 500ml hoisin sauce
- 1 red bell pepper
- 1 red onion
- 1 jalapeno pepper
Preparation
- Rub the chicken thighs with the chicken rub.
- Cut the paprika and jalapeno pepper into rings and the red onion into half rings.
- Line your 3L Dutch Oven with the slices of bacon. Place the slices so that they run up the wall of the pan.
- Then cover the whole bottom with the chicken thighs and pour the Hoisin sauce over them.
- Add the paprika, red onion and jalapeno pepper.
- Fold back the slices of bacon so that you get a closed package.
- Put the lid on your Dutch Oven and place 15 coals underneath and 5 coals on the lid.
- Every now and then, use a lid lifter to lift the lid and check that it is not too dry, if necessary, add a little water.
- When the chicken thighs have a core temperature of 72 degrees, after about 45 minutes, your dish is ready!
